Honey Glazed Chicken

Honey glazed chicken is a quick, easy meal prep for dinner; and everyone just loves it. Great for when you are looking for a lighter meal. Can easily be doubled for a larger group. Served over a bed of rice – perfect!
½ cup honey
4 tablespoons soy sauce
1/4 teaspoon red pepper flakes
3 tablespoons olive oil
Cornstarch
Salt and pepper
¼ teaspoon paprika
¼ teaspoon ground mustard powder
2 skinless, boneless chicken breast halves, cut into bite-sized pieces
Green onions for garnish if you like
- Whisk honey, soy sauce, and red pepper flakes in a bowl; set aside. A little tip: before you pour your honey into a measuring cup, coat the measuring cup with Pam and your honey will slide right out of the cup lickity split. And easy clean up too!
- Season chicken pieces with salt and pepper, paprika, and ground mustard powder.
- Dredge seasoned chicken pieces in cornstarch. This will help thicken up sauce when it cooks down.
- Heat olive oil in a skillet over medium heat; cook and stir chicken in hot oil until lightly browned – about 5 minutes. Removed from pan and set aside.
- Pour honey mixture into the skillet, continue to cook and stir at a low heat until the sauce is thickened. This should take about 10 minutes. Add back chicken to skillet with sauce and cook an additional 5 minutes until chicken is no longer pink.
- Serve over rice.
