Cranberry Relish with Tangerine and Mint
Serves 10-12

This fresh, uncooked relish is amazing with turkey, but also excellent with ham and pork.

3 cups (12 ounces) fresh or frozen cranberries
2 unpeeled tangerines
1/2 cup packed fresh mint springs
1 cup plus 2 tablespoons sugar
2 tablespoons fresh lemon juice

Wash and pick over the cranberries.  Cut the tangerines into eighths and remove all the seeds.  Place all of the ingredients in a blender or food processor and grind into a fine puree.  Pour into a medium bowl, cover, and chill.  Let sit at room temperature for 1 hour before serving.
